Ingredients grated rind and juice of a lemons 85 g sugar 3 large egg yolks 15 g butter 15 g cornflour
Method Blend all ingredients in a 500ml glass jug. Cook on MEDIUM - HIGH in oven for 3 minutes or until thickness, stirring every minute. Pour into hot streilised jars and seal immediately.
Method Place strawberries in a 5 litre casserole dish. Cover and cook on HIGH in oven for 5 minutes. Stir in sugar and pectin if required. Cook on MEDIUM - HIGH in oven for 35 to 40 minutes, stirring every 10 minutes. Check if the jam is setting. Cool and bottle in sterilised jars. Seal!!!
